Vinification: The vinification is carried in stainless steel tanks, with the submerged cap system and the maceration of the skins lasts 20 days. The fermentation temperature is controlled and maintained at about 31 ° C. The malolactic fermentation takes place during the aging in wood
Aging: The aging lasts 36 months in small barrels of which 30 into 10 hl Slavonian oak barrels, 1 month in stainless steel tanks and 5 months in the bottle for proper development of the product before the market.
Tasting notes: intense, elegant wine with a great concentration. The colour is deep garnet. The nose explodes with ethereal and enveloping balsamic sensations, predominates the rhubarb at the beginning then with the age it turn into spices such as cinnamon and green pepper notes, white truffle and vanilla. The mouth is opulent, and rightly austere, with a great aftertaste and a silky tannins.
Alcohol: 14% to 15% depending on the year
Serving suggestions: goes well with meat dishes, spicy and savoury courses, cheese and is an ideal accompaniment to game dishes.
Longevity: from 20 years of age
